Ceramic cookware offers a good alternative to traditional nonstick pots and pans that are often coated in Teflon, a material known to release toxins when overheated (500°F is the recommended maximum). When compared to stainless steel, ceramic cookware can offer the benefits of higher-heat searing and even heating along with nonstick properties that are often hard to master without the help of a nonstick coating (or a very good culinary instructor), like keeping pancakes from tearing apart in the pan. Some ceramic cookware is made from clay, baked in a kiln, and glazed, but the majority of it is metal glazed with ceramic.
